temporary solution: use console view, create a workflow to close a task (use "update field" and create checkbox that when clicked would change a status of the task to completed) and another workflow with a follow-up date (use it as a trigger to create a future - follow-up task). It works, but I wish it can be easier.

Yeah, this is a nasty one that I'm sure impedes adoption by sales teams. A lot of sales people are very nuts-and-bolts task oriented. Right now, the unprioritized tasks list is as if you had a personal to-do list with 50 items on it and "empty the wastebasket" had the same priority as "put out the fire" and "make a deposit so the mortgage doesn't bounce."

For instance if they could sort by opportunity size or stage it would REALLY help them focus.

On the Home Page, the My Tasks section has a predefined display of data – so you can only see Complete, Date, Subject, Name, and Related to. Users should have the option to select data they want to display. For example, a user might want to view the Account Site (of Accounts) or the phone number of the account. Everyone has different preference; this display should allow the user to customize it to their preference.
<br />Also, the views are limited to Overdue, Today, Today & Overdue, Tomorrow, Next 7 Days, Next 7 Days & Overdue, This Month, and All Open. The user should have the option to customize the view

An activity list view can be created for your customizations, but it requires you to go to a different screen. The standards show on the first screen, and your customizations can be made through the Activity List View button on the home page (button next to the single person and multi-person view). Once in that screen, you build your activity views similar to how you build an account or opportunity view. This won't show on your home page, but you will be able to access it for the criteria you requested.
